I Around Our House MAKING JELLY JELL To make sure that Jelly will Jell properly, find out just how much pectin, that Jelly-making substance, is in the fruit juice before work is started says the Stute College of Home Econ- omics. Too little pectin gives a soft and sirupy Jelly, while too much makes It too firm and tough. To give fruit Juices the pectin test, the college suggests one of the following: 1. Cook a small amount of the Juice with sugar to Bee whether It will Jell. 2. Tost with alcohol: Pour one tablespoon of cooked Juice into three tablespoons of alcohol. Turn the container gently so that all the Juice comes In contact with the alcohol. If the pectin forms u solid mass, enough pectin Is present to make a good Jelly. If tho pectin collects In small wooly- llke particles, not enough Is pres- ent to make a good Jelly. If this IH true olther boll the Juice down to concentrate the pectin or add more pectin to the juice. 3. Test with Epsom salts: Stir together one tablespoon of cook- ed fruit Juice, one teaspoon of su- gar, and one-half tablespoon of Epsom salts until the salts have been dissolved, and let the mix- ture stand for 20 minutes. If it ha- then formed a solid mass or large wooly-like particles, the juice contains enough pectin to make a satisfactory Jelly. The man is about sixty years old, slight of build, has black hate and dark eyes and is well dressed. His favorite ruse is to approach a farmer under the pretense of being interested in the purchase of blooded cattle. Then he takes an option on some cows and gives the farmer a check to seal the bargain. Before leaving he usually discovers that he is out of cash and prevails upon the far- mer to cash a small check.
