Strawberry Sherbet % cup sugar % cap water 1 pint strawberries 1 egg white % tablespoon lemon juice Wash, hull and mash, the straw- berries through a sieve. Boll the sugar and water for five minutes and cool. Mix all the ingredients and freeze to mush. Stir in th e stiffly beaten egg white and freeze in the refrigerator, or i n salt and ice. Add more sugar if the straw- berries are sour, Rhubarb and Strawberry Preserves 3 quarts strawberries 2 quarts rhubarb 10 cups sugar 1 cup lemon juice Wash, drain and hull the straw- berries. Add seven cups of sugar and let it stand for two hours. Wash and dry the rhubarb and then sliee. Add th e remaining three cups of sugar to the rhubarb and let it stand for two hours. Combine the fruits, bring to a boil and let it boil hard for thirty minutes. Add the lemon juice and boil ten minutes. Pour into hot sterilized glasses or jars and when cold cover with melted paraffin and cover. Chocolate Sauee for Ice Cream 1 cup sugar * Vi cup corn syrup Mi cup milk 1 square of chocolate 1 tablespoon butter Mix all of the ingredients to- gether except the butter and stir over the fire until the sugar is dis- solved. Boil for seven minutes and then add the butter. Serve hot o n ice cream. Confer Tea 1 quart strong tea, chilled Vi cup sugar Juice of 3 lemons 1 quart of glngerale Dissolve the sugar in the tea, and add th e lemon juice. Use enough ice to make it cold.
