Select smooth, medium-sized po- tatoes, scrub them, remove, the eyes and any blemishes, place them in a baking pan or on the rack in a hot oven (400 to 450 degrees Fahrenheit), and bake for forty- five minutes to an hour, or until they are tender. Be sure to have the oven hot before the potatoes are put in, To test the potatoes, do not pierce them with a fork, but squeeze them with the hand wrapped in a towel. When soft, remove them from the oven. Remove the top of each potato so as to make it boat shaped. Scoop out the inside, beine careful not t o break the shell. Mash this, or preferably rice it very thor- oughly. Add butter, or butter sub- stitute, salt to taste, and hot milk, and beat the mixture well. Add one-half cup of peanut butter and two egg whites to the mixture, then pile this lightly into the shell, not smoothing down the top. Stand the potatoes in a shallow pan, re - turn them to the oven and brown lightly on top. A quick oven is re- quired. For a simple dinner menu, the College suggests: escalloped sal- mon, baked stuffed potatoes, but- tered carrots, lettuce and water cress salad, cooked apricots and sugar cookies, coffee or tea, milk for the children. the hospital,. FIRE »*! The big new press had hard- ly finished turning out last week's Tribune, with my lit- tle screed about never having solicited fire Insurance, be- fore upprehensive property owners had begun coming Into this agency .and promising me an opportunity to write poli- cies on their property. It made me feel like Daniel Boone who was said to be such a dead shot, that, when he went into the woods with his gun, the squirrels used to sihout from the tree tops, \Don't shoot, Daniel, we'll come down.\ But, as a matter of fact, I'm not very talented, or very persistent as a solicitor—but I wouldn't want that to get out at all. The, office of this agency is still in the McKnlght Block where It has been for 55 years, but it is amazing how many insurers haven't found it. Charles N. Hood, Fire Insur- ance exclusively.
