Oakdale. Mrs. Peter Moskwa of Sayville , county chairman , will represent the county as a delegate to the department convention to be held in Albany next Thursday throug h Saturday. Mrs. Albina Vanderbeck of Bay Shore , first vice president , will be alternate at the convention. Mrs. Vanderbeck , who is also county membershi p chairman , has made her quota for the county . There are 32 quota units in Suffolk County. There are 3 , 024 paid mem- bers for 1961. The Suffolk unit has KHi members over its quota. Americanism Chairman M r s. Charles Birs sent scrap books on Americanism submitted by the Amityville and Feustel Kurdt Units to the department. Child Welfare Chairman Mrs. Joseph Fish has sent a tota l of ,>775 for the department child wel- fare project , \Blue Angel Fund. \ Mrs. ' Joseph Low , publicity chairman , sent the county scrap- book and the two winning unit scrapbooks to the department— Group I with membershi p up to 100 , Arthur II. Clune Unit , Mrs. Anna Gilewski , winner , and Group II membership over 100 , Amity- ville unit , Mrs. Viviene Ry der , winner. Mrs. Mary Delaney, Poppy Pos- ter chairman , forwarded winning posters to the Department. Group I , includes the William Merritt Hallock unit , Lake Ronkonkoma , and Group II the Four S unit of East Isli p, and Group III the Ba- by lon unit. County Historian , Mrs. Marga- ret Ohlmilier , reported that his- tories from seven units were judg - ed in the history contest. Trick Riders Take the Spotli g ht In an era of dying \Big Tops , \ Wallace Bros. Circus will bring all-new g igantic circus tent to Waverly Avenue , Patchogue , on August 2 and 3 for two full and complete performances each day at 2 and 8 p.m. under the sponsorship of the Knights of Columbus 725. Over 7 , 000 man hours of labor were involved in the making of this all new Big Top, along with 23 , 800 feet of canvas , 5 , 300 yards of oiled genuine hemp rope , 700 pounds of linen thread im- ported fro m Ireland , 500 pounds of pure beeswax , 2 , 600 pounds of water and tireproofing compound to make the top conform to fire regulations of all 50 states , and over a ton of iron stakes. In addition to the allurement to young and old of seeing the circus city rise on a vacant lot earl y in the morning, Wallace Bros. New features in the colorful 41-page directory this year in- clude a salt water fishing guide , points of interest , and a map of Suffolk County showing main roads , ferries , parkways . railroad stations and other information of value to visitors. The LIA distribute s the di- rectory free of charge to all those who inquire about vaca- tion sites on Long, Island. In addition , some 70 , 000 copies are dispensed each year through turnpike and Thru- way stations , oil company tourist departments , chambers of commerce , expositions and sports ehows , restaurant chains , and hotels and motels throug hout the United States and Canada. Duck Festival July 29 To Aid R'head BPOE Charities RIVERHEAD—Three tons of duck will be barbecued at the fourth annual Long Island Duck Festival July 29 , on the grounds of the Elks Lodge here in Riverhead. That' s enough duckling to feed the 3 , 000 people who are expected to attend this year ' s festival , according to Seth Hubbard , chairman of the Long Island Duck Festival^- — Association. In like suppl y will be other Long Island products such as sweet corn , potatoes , clams , to- matoes and watermelon , all pro- cured by a hard-working food com- mittee whose members are William G. Hubbard , Walter Kaminski and Charles Patrick. Mr. Patrick is also the expert chef who will over- see the barbecuing of the ducks. Another feature of the festival , which will open at 3 p. m. and con- tinue until 8 p. m., is a beaut y contest. Twenty lo\el y Long Island girls will vie for the title of Long Island Duck Queen. On the panel of judges are County Executive H. Lee Dennison , Congressman Otis G. Pike , Rudol ph Kammerer of Westhamp ton Beach and Mrs . Margaret Dowdney and Mrs. Jean Alexander , both of East Hamp ton. Purpose of the festival is to ad- vertise and promote Long Island' s $30 , 000 , 000 duck industry and to demonstrate , gastronomicall y, that there are no better-tasting ducks in the world. They are the result of meticulous research in the fields of breeding, environment and feed- ing, carried on with the cooper- ation of Cornell University at the L. I. Duck Research Cooperative ' s modern laboratory in East port. Tender ducklings are barbecued in a large p it over carefull y regu- lated charcoal fires. They are bast- ed with a sauce prepared and per- fected by Mr. Patrick. Here is the ! recipe for the sauce to liy out at your next cook-out. It has been cut down for a small five-duck bar- becue. V' i pint cooking oil 1 pint cider vinegar Salt—3 tablespoons Pepper x /2 teaspoon 3 teaspoons Poultry seasoning Eggs—1 Mix the dry ingredients first , add the vinegar , and finall y the beaten egg. Mix thoroughly, add the cooking oil and mix again. Keep the sauce cold and app l y gener- ously with a brush several times during the cooking.
