Kenneth Andeisen of Mastic Beach , who is our versatile coires- pondent for the Mastic Beach area. With the same enthusiasm for cooking that she has for her many activities Mrs. Andersen enjoys her many and dhersified interests. Mrs. Andersen is president of the Ladies ' Aid Society of Grace Lutheran Church in Mastic Beach and the ladies always find that the cookies pack well and stay fresh when they are sent throug h the mail. So how about mailing a box to a friend. Not to be neglected are the home folks , so bake a batch for them too. You can vary the recipe in a number of w ays—use different flavorings , anise , peppermint , etc., instead of vanilla. Cookies Vz pound butter or margarine 2 cups white sugar 4 eggs 4 teaspoons vanilla 3 teaspoons baking powder 4 cups flour Cream butter and sugar , add eggs and vanilla. Sift flour and baking powder together and add to creamed mixture . Drop by spoon on a cookie tray which has been lined with foil or else has been lightl y greased. Cook in a 400 degree oven for 10 minutes or until lightly brown at edges. Makes about 7 dozen cookies.
