Frances Johnson Be sure and enjoy the local corn —it is especially delicious this year. In fact this is; the glamour season for homegrown vegetables. Don 't say at the end of the sea- son , \Why didn 't we have more corn—or tomatoes—or egg p lant , etc?\ Do it now. I This recipe for Shell Macaroni with Easy Meat Sauce is another of two sent to us b y Mrs. Frances Sposato of Mastic Beach. It is as delig htfu l as the one last week for Barbecue Spare Ribs , which was \ sure \ a winner in any lan- guage. Casserole dishes are certainly among the most necessary for any season. This one is wonderful for you can prepare it and then pop it into the oven when you get ready. Shell Macaroni with Easy Meat Sauce 1 can tomato paste 3 small cans tomato sauce 2 tablespoons oil 1 small clove garlic 1 medium onion , chopped 2 cups warm water 1 pound lean chopped bee f Salt and pepper to taste. Dash dry basil. Saute onion , garlic and meat in the oil for about 10 minutes , add paste and stir for about 2 minutes then add sauce , water , salt and pepper. Cover and simmer for about 1 \ _ hours. I Cook shell macaroni as directed on package. Drain , return to pot and add 3 tablespoons butter or margarine. Stir over low heat to melt; add a little sauce and stir. pour into casserole and add re- mainder of sauce. This can be prepared earlier and then baked in a 375 degree oven lor 20 minutes. Sprinkle with Parmesan cheese. This recipe serves from 4 to fi portions. Last Friday registered voters of the district approved 04 to 0 the district' s budget of $08, 003.07. With antici pated receip ts of $(50 and the anticipated balance as of January 1 , 1002 at $503.70 , the amount to be raised by tax is $08 , 370.18. Mr. Pearl said last year ' s rate was $1.33 for the hvdrant area and $1.30 per $100 assessed valu- ation for the rest of the district . He antici pated the 1002 rate would be $1.01 and $1.00 , respectively. The h y drant rental is a $0 , 750 item in the present budget. \The rate will be less , \ Mr. Pearl said , \because the assessed valuation has been raised. The amount to be raised by taxation ' ,., lower than for 1001. Therefore , the rate will be proportionatel y less. \ The fiscal yea r is the same as the calendar year for fire districts, C reach Fire District Rate Expected to Fall Several persons have contacted the Brookhaven Town Civil De- fence Office asking about Civil Defense and indicating an aware- ness of the value ol Civil De- fense. The main questions asked were concerned with what to do when the signal is sounded for an at- tack ; what the signals are and how to take care of a family s need for food and first aid. Brookhaven Town Supervisor and Civil Defense director , Aug- ust Stout , Jr., last week said that these questions and others can be answered and people can be trained by enrolling in Civil De- fense and taking the courses pro- vided. Brookhaven Town Civil Defense has always advocated that one person in each famil y should be familiar with lirst aid , according to Mr. Stout. Anyone interested in enrolling in first aid courses or training for the rescue service can call the Civil Defense Headquarters in Patehogue at GRover 5-4440. The Brookhaven Town Rescue Service is in need of volunteers and any- one interested should contact Daniel Burge , Jr., Rescue chief.
