This recipe for chicken loaf is one of the clever ways to make left-over chicken into an intriguing dish. It is a meal in itself and. served with an imaginative salad and accompanied by hot clover rolls it' s d ; vin<\ And don 't for\ >! cranberry sauce — the Long Is- land kind ! Chicken Lo-i f 1 cup broken spaghetti 2 quarts boiling water 2 teaspoons salt Boil for 15 minutes or until tender 1 cup dry bread crumbs 1 cup diced cooked thicken % cup chopped green peppei 2 tablespoons minced pimento 1 cup grated American cheese 3 eggs , beaten slighily 1V 2 cups warm milk Vi cup melted veg 'table short- ening. 1 teaspoon salt Cook the spaghetti in the boil- ing salted water in a large sace- pan until tender , then drain. Turn into a bowl ; add bread crumbs , chicken, green pepper , pimento ami cheese . Beat the eggs slightly in a bowl and stir in ni'lk, shortening and salt. Add to the chicken mix- ture and mix thoroughly. Place in a greased loaf pan (ii inch) ami set in a pan of hot water. Bake at about 325 degrees for about one hour or until firm. When done , a knife inserted at the center should come away almost clean. Serve with a hot sauce, made by combining 1 can mushroom soup or a can of chicken soup and 1 \ cup milk.
