Engagements Frances Johnson I Everyone seems to be talking economy these days and the wise housewife does something about it and practices economy in cooking. 1 Delicious casserole: elishes are per- haps the most economical way to j economize. That makes four economical words in one sentence — that ' s what we think about economy. This recipe for using left-over pork is an attractive meat elish and is a real money saver. And the family will enjoy the- end of the roast as much as the first time it is served. And you can use minute rice if you care to — that saves cooking time . Serve the casserole with apple sauce. Somehow apple sauce and pork are still \ going steady, \ like cranberry sauce and turkey and mint jelly and lamb . Those sp iced apples go nicely with pork , too. And since you have saved a little on the casserole ju st buy a jar of spiced apples; their delectable red color is a treat, too. This casserole is a meal in it- self. Add the epicurean touch of a green salad, then you ' re re-ady for supper. PORK AND RICE CASSEROLE 2 parts diced left-over roast pork to 1 part cooked rice. 1 medium size diced onion 2 (No. 2) can tomatoes 2 teaspoons sugar salt and pepper to taste. Combine all ingredients , add wa- ter if nee-essary. and bake in hot over for Ai of an hour. A Pinch of This and A Pinch of That
